Turkey-Tortilla Casseroles

PREP AND COOK TIME: About 30 minutes

3 cups 1/2-inch diced cooked white turkey meat

1 quart Tamale Sauce

1/2 cup sliced pitted black olives

3/4 cup chunky-syle tomato sauce

1/4 teaspoon ground pepper

1/8 teaspoon cayenne

1 teaspoon chili powder

1 1/2 cups frozen corn

1 red bell pepper

1 teaspoon sugar

2 teaspoons Worcestershire sauce

1 pound tortilla chips

1/2 cup grated Jalisco or Monterey Jack cheese

  1. Preheat oven to 350°
  2. Dice red pepper and saute for 3 minutes in tablespoon of olive oil
  3. Mix all the ingredients except the chips and cheese in a bowl
  4. Pour into a 15 x 10 inch Pyrex bking dish.
  5. Stud the casserole with the chips
  6. Bake in the pre-heated oven for 30 minutes
  7. Sprinkle the top of the casserole with the cheese.
  8. Return to oven until cheese is melted.
  9. Serve immediately
